How to make Fryjack!

Belizean fry jacks are one of the most popular comfort foods in Belize! They are usually a golden brown half moon or triangle shape fried dough – that is often compared to the beignets in New Orleans!

Here’s a quick recipe on how to make these delicious mini puff pastries.

Ingredients
– 2 Cups – Flour
– 3 Teaspoons – Baking Powder
– 1/4 Teaspoon – Salt
– 1 Tablespoon – Vegetable Shortening
– 1 Cup – Water, Coconut Milk, or Whole Milk
– Oil for Frying (Vegetable Oil works well)

Preparation
Pour approx. 1/2″ of oil into a skillet, and start heating it on the stove
Add dry ingredients together: flour, salt and baking powder
Add shortening
Add liquid (water, coconut milk, or milk) little by little mixing by hand.
Knead for 2-3 minutes until smooth, and roll dough out into a sausage form. Using your fingertips work the dough into a round, flat pancake. Cut dough “pancake” into quarters.

Test your oil, if it’s hot, you are ready to start frying your first Fry Jack.

Fry until golden brown and enjoy with eggs, beans by itself!
